Owners for twenty years of the Auberge de la Touques in Pont-l'Évêque (Calvados), Béatrice and Jacky Libralato participated in the show The best regional cuisine is at home on M6, October 30 and November 1, presented by Norbert Tarayre and two-star Michelin chef Yoann Conte.
A 100% local menu that won over the jury
A first for this couple of restaurateurs and his team who did not hesitate to respond positively to highlight the products of the Normandy terroir and their local producers.
“The production was looking for a traditional restaurantexplains Béatrice. She approached us thanks to the tourist office who had recommended a few places in the area last February to see if we were interested in participating. And after spending a one hour castingwe were detained. I think the menu, the dishes and the location appealed to them and really suited what they were looking for. »
During the a few months who followed this selection, it was time for reflection. It was no less than a starter and/or an appetizer as well as a main course and a dessert that had to be presented au jury during filming which spanned two days. “With our chef Sébastien Bellargent, we decided to go on Vire andouille accompanied by apples and a Pont-l'Évêque sauce for the starter, on a chicken from the Auge valley and its vegetables as a dish and on a Bourdelot for dessert, because I find that you don't find it that often in restaurants. » A menu which, it seems, won over the juries since the team achieved an average of 18.5 out of 20. Enough to beat their competitors of the day and qualify for the final!
But unfortunately, the adventure will not go any further. In the duel with a restaurant in Hauts-de-France for a place in the grand final, the Auberge de la Touques was not able to satisfy the chefs as much as their competitor with a dish composed of 100% vegetablesthe imposed theme.
Chefs act the same way on TV as they do off TV
But it didn't matter, the main thing was elsewhere. “The idea was also to put forward our producers without whom we could not do much, confides the owner of the establishment. We have them invited to eat during filming, they are the ones we see behind us in the show. Our menu is changing four times a yearbecause we work with seasonal and short-circuit products. If we can do it, it’s also thanks to them. »
Since the broadcast of the program, the fifty place settings served at each service are no longer enough. The phone didn't stop ringing and customers came from all over the region the next day. “Some even wanted to call production so that the chefs could justify their choice for not having qualified the restaurant, it's causing a bit of a buzz in the area, Béatrice laughs. But it was a great experience. Leaders act in the same way on and off TV. Norbert is always a little crazy and Yoann is very friendly and accessible. Our chef was delighted to be able to interact with them. »
