“It’s extraordinary”: Demi Moore spins the aligot in the film “The Substance”, the emblematic Aubrac dish appears in Hollywood

In her film awarded for best screenplay at the 2024 Film Festival, French director Coralie Fargeat puts this Aveyro-Cantalo-Lozerian dish in the spotlight.

After the laguiole knives in Squid Game, here is the aligot in “The Substance”! The assets of northern Aveyron are exported internationally. Since this Wednesday, November 6, the film directed by the Frenchwoman Coralie Fargeat has been screened in cinemas and the inhabitants of the Aubrac plateau will have noted a beautiful tribute, since it is the Hollywood star Demi Moore herself who is trying her hand at to the aligot recipe!

A little touch of sweetness and flavors in a film with a polished but gory aesthetic, where 21,000 liters of fake blood were used during filming! This one won over at the last Cannes festival, winning the screenplay prize. The story is simple, Elisabeth Sparkle – played by Demi Moore – is an American television star nearing the end of her career, her management wishing to replace her with a young and attractive host. In this quest for a rejuvenation treatment with feminist accents and denouncing the cult of beauty, the fallen star injects herself with “the substance”, promised as a miracle cure to obtain “a better version of oneself”.

A wink from the director?

But this is only the beginning of a long descent into hell. Thanked by her employers, Elisabeth Sparkle receives a book of French gastronomy recipes as a parting gift. And when she opens the book, actress Demi Moore comes across… the recipe for Aubrac aligot! And according to the following shot, the result looks convincing and the recipe a success for the antihero of the film.

But then, how did this dish find its way into the image? This is certainly a wink from this director who enjoys this reference on social networks. “Best poster ever”writes Coralie Fargeat on her social networks in response to the photomontage produced by a Lozère putting the aligot at the heart of a poster for the film.

For the Jeune montagne cooperative, “it’s extraordinary”

As for the Jeune montagne cooperative, we are delighted with this nice spotlight. “It’s amazing for us to have this, especially with an actress like Demi Moore who has international exposure”we smile from the cooperative, one of the main producers of aligot. Recently, the recipe based on fresh Aubrac tome and potatoes was highlighted in the series l'Éclipse filmed in Bozouls, but in Laguiole, at least at Jeune montagne, we do not remember a wink in an international film awarded at Cannes. Note that the cooperative discovered this wink following our call, this Friday, November 8, so perhaps an aligot master is hiding among the film team!
