The famous Lyon pastry chef Sébastien Bouillet requested the safeguard procedure in order to bounce back following his heavy investments in 2022.
It was in 1977, founded by Father Bouillet, that the famous pastry shop bearing his name moved to Croix-Rousse. Taken over in 2000 by his son Sébastien, the pastry-chocolate shop is a family affair. Known for its aesthetic creations and unique taste, Bouillet now has 14 points of sale in Lyon and its surrounding areas. At the start of 2025, the family business requested a safeguard procedure in order to bounce back and continue its activity following the heavy investments made in 2022.
New workshop in Miribel
At the end of 2022, the Lyon-based chocolatier and pastry chef invested in a brand new laboratory dedicated to chocolate in Miribel. Spread over 800m2, this space complements the 1200m2 dedicated to pastries installed right next door. A significant investment, which the house seems to struggle to make profitable.
According to Lyon decision-makers, the pastry chef and chocolatier would have requested investment in safeguarding the company, in order to bounce back after this investment. Following this, the Lyon commercial court declared the opening of the safeguard procedure on January 8. The opportunity for the pastry-chocolate industry to get off to a good start.
