This Monday, January 20, the Chamber of Trades and Crafts, in the presence of the Prosper Montagné club, presented the galette des rois to the prefect of Aude, Christian Pouget, in the golden salon. The State representative highlighted the difficulty of recruiting in the pastry chef-baker professions.
“A very nice ceremony that we organize.” The prefect of Aude, Christian Pouget, was presented with the galette des rois by the Chamber of Trades and Crafts (CMA) and the Prosper Montagné club, this Monday, January 20. During the speeches, everyone returned to the recruitment difficulties in the pastry and bakery sector. Alphonse Caravaca notably recalled the importance of perpetuating know-how in the face of “shortage of professionals”.
For his part, the State representative recalled that “this sector of activity has evolved”. “This corresponds to customer demands which have changed, particularly with the search for more traditional products. These people seek to highlight the value of quality products”he explains. Comments supported by the president of the CMA, Pierre Vera: “We must promote the know-how of our region”he defends in the presence of two apprentices from the CFAI of Lézignan-Corbières.
-Among the cakes which were distributed to the prefecture services, some were made by Carcassonne pastry chef Rémi Touja and by CFAI apprentices.
