The French algorithm delivers this Monday evening, at the Quai d'Orsay, its 2025 winners as well as its numerous special prizes.
It's not really a surprise. Guy Savoy, who had already retained his first place in 2023 – tied – in the ranking of the 1000 best restaurants in the world according to La Liste, despite the demotion from 3 to 2 Michelin stars a few months earlier, is back for an eighth consecutive year.
The head of the Paris Mint, who has also just been elected a member of the Academy of Fine Arts, once again receives the idyllic score of 99.5/100, alongside eight other establishments: la Vague d'Or by Arnaud Donckele (Saint-Tropez) in France, but also Le Bernardin (New York), L'Enclume (Grange-over-Sands, Great Britain), Schwarzwaldstube (Baiersbronn, Germany), Lung King Heen (Hong Kong). As well as 3 newcomers: Cheval Blanc by Peter Knogl (Basel), Matsukawa (Tokyo) and SingleThread (Healdsburg, USA). In total, seven countries share first place.
Among the other French restaurants that are on the podium of La Liste 2025, we highlight: L'Ambroisie (Paris), L'Assiette champenoise (Tinqueux), Le Louis XV (Monaco), Plénitude (Paris) and Régis et Jacques Marcon (Saint -Bonnet-le-Froid), second at 99/100. But also, third with 98.5/100, Georges Blanc (Vonnas), Kei (Paris) and Troisgros (Ouches).
Overall, Japan is the most represented country with 126 restaurants in the top 1000, followed by the United States (114), France (111) and China (109).
The Nantes region, a new gastronomic destination
The List, a ranking created in 2015 on the initiative of Philippe Faure, former ambassador, and the Quai d'Orsay, to compete with the influence of the World's 50 Best, is produced using an algorithm which compiles guides, articles, blogs and reviews from around the world. The 2025 edition lists 35,000 restaurants, from 1,100 publications in 200 countries.
A ceremony takes place this Monday evening at the Ministry of Europe and Foreign Affairs. Twelve special prizes, awarded to several recipients, must also be announced. Among them, an honorary award to Georges Blanc for his entire career (last year, Michel Guérard was honored).
But also, on the French side, eclectic winners throughout the territory: the culinary talent at Coline Faulquier (Signature, in Marseille, which should move in 2025) and the pastry talent at Aurora Storari (Hémicycle and the dessert restaurant Aura, in Paris ). The Nantes region, represented by La Mare aux oiseaux, Le Manoir de la Régate, Freia and Sépia, is crowned a new gastronomic destination. Kei Kobayashi (Kei, Paris) receives the innovation prize; Christophe Hay (Fleur de Loire, Blois), that of ethical and environmental responsibility; Le Boeuf sur le Toit (Paris), that of the festive gastronomic restaurant; Les Grands Buffets (Narbonne), the price of authenticity. Two new Parisian restaurants – Hakuba and La Ferme du Pré – are recognized as openings of the year. Finally, six tables are to be explored: Auberge Sauvage (Servon), Maison Duler (Lendou-en-Quercy), Arborescence (Croix), Cibo (Dijon), Faubourg Daimant (Paris) and La Courtille (Tavel).
