All the commotion at the Kawéni hotel and bakery school. For several weeks, around twenty students have been working with Mahoraise vanilla to create cocktails and cakes. Dishes which will be presented on the days of the vanilla festival, November 30 and December 1 at Coconi.
Students in class 1era initially discovered a vanilla farm. A product that they are used to working with in the kitchen but which they have never seen in its natural state. The owner of the place welcomes the young people into his field with pleasure. Foundi Madi likes to pass on its know-how regarding vanilla.
It should be noted that Mayotte vanilla, after experiencing a golden age in the 1970s, the culture gradually ran out of steam. But passionate farmers like Foundi Madi saved the sector, hoping to see the younger generation take up the torch.
For the teaching staff, it is essential to bring together students and vanilla farmers. One of the best ways to make them aware of the value of this exceptional product. Mayotte vanilla has indeed obtained a silver medal at the Paris agricultural competition during the 2022 and 2023 agricultural fair.
This Mahorese vanilla is used in all its forms in the mixology workshop, where students from the hotel high school prepare cocktails based on vanilla syrup and powder.
Whether in a cocktail or in pastries, it makes the taste buds sparkle, to the greatest pleasure of all.
