New restaurants to discover this winter in Paris
Armande
In the Abbesses district, perched at the top of a typical Montmarte steep street, Armande waits for us, at lunchtime, snack time or dinner, to satisfy our most gourmet desires. Behind the windows of this catering counter which also improvises as a pastry shop, a host of dishes, each more tempting than the last. Prepared by the chef Margaux Bellorgeythe dishes are inspired by his memories and his travels to Saint-Barth, Sri Lanka and Andalusia. There you can find, for example, portobello mushrooms dressed in pretty breading, plump chicken koftas, golden polenta fries or a perfectly comforting lentil dahl… But also two star sandwiches: a refined banh mi made with French pulled beef, and above all a dingo crab bun which has it all (brioche bread, crumbled crab claw, celery, green apple, carrot, chives and vegan mayo). Everything (without exception) is so tasty, perfectly dosed with spices, always served with the right sauce, in pretty vintage dishes. For dessert, sweet creations that you won't know where to start with… We love the pistachio flan, perfect to compliment Armande's signature hot chocolate revisited with coconut milk and Peruvian chili.

Doe
To feel like you're having lunch or dinner at grandma's, but just a stone's throw from the Champs-Élysées, you reserve a table at Biche, a new restaurant recently opened in the heart of the 8th arrondissement. In a decor that evokes that of an old-fashioned country house, where only vintage pieces found here and there rub shoulders (notably a very pretty collection of slushies), the menu pays homage to typical French cuisine from typical, both popular and gourmet. Snails, egg mayo, pâté en croute, sole meunière are all perfectly executed classics that can be found in the chef's “terroir” dishes. Paul-Alexandre Laumont. In winter, we come here to warm up with a good pot au feu, a very rich blanquette or a traditional Burgundy to savor at the same time as a very good glass of wine. It is forbidden to leave the premises without falling for the tarte tatin (divine) or the profiteroles (naughty).

Stock
In the Bourse district, the Stock restaurant takes us back in time. Head to the seventies thanks to a tangy decor with vintage accents (45 rpm records, retro telephone, old magazines, etc.) designed by the studio buissonbuisson and a disco-funk atmosphere that never fails to make the bon vivants who come to sit there groove. A hangout for friends, designed by a group of friends, Stock also delights the taste buds with sharing cuisine, raw and colorful, designed by the chef Théo Badalucco. A master in the art of making flavors swing – which oscillate between acidity, bitterness and full-bodied notes – he cooks his ingredients on a Japanese barbecue to give them a slight smoky taste. From our dinner, we will especially remember: the super sexy zucchini fritter with its citrus ricotta heart, its hazelnut praline and its spicy padrón sauce, but also the lean one garnished with cockles, goji berries and carrot puree perfect in every way. Dishes that are as much worth the detour as the mixologist's truly original cocktails Lorenzo Dos Santos Do Jesus. Tzatziki style, mint tea, or chipotle pepper, we promise you have never seen or drunk anything like it.

The Resistance Table
In the Resistance family (Les Résistants, Le Comptoir des Résistants, L'Épicerie des Résistants), we now ask for La Table des Résistants. Inaugurated in the spring of 2024, in place of L'Avant-Poste, in a lively district of the 10th arrondissement, this restaurant continues to be the standard bearer of the values dear to the group. Namely the promotion of agricultural production and livestock breeding by small French farmers and producers. With a truly affordable lunch menu (starter, main course, dessert at 28 euros) and high quality, worthy of a gourmet, composed by the chef Maurizio Madaio (ex David Toutain, Loiseau Rive Gauche), La Table des Résistants shows that it is possible to combine culinary creativity with the challenges of sustainable peasant agriculture. By adapting to daily deliveries and with great knowledge of their products and their producers, they manage to offer cuisine committed to all aspects (supply, social, energy, etc.). On the plates, this gives for example, a delicious pollack from Finistère decorated with an eggplant caponata, tomato pepper coulis and fermented peach ketchup, or even a duck (rather rare on the restaurant menu) bathed in a nice meat gravy with leeks, olive tapenade and flax seeds. Flawless until dessert: raw and cooked fig tart and fig custard seasoned with fermented chili pepper, all served with sublime Corsican honey ice cream.
