This is news that will please the hams of Cros (Puy-de-Dôme). According to Aveyron Press CenterRachida Dati has decided to accept the curing of hams at Saint-Flour Cathedral in Cantal. Consequently, those who are prepared in the same way within the church of Sainte-Madeleine-de-Cros in Puy-de-Dôme are no longer threatened.
The new Minister of Culture ruled in favor of the affineurs in dispute with the Regional Directorate of Cultural Affairs (Drac) of Cantal since 2023. The latter asked to release the fifty hams which were ripening in one of the towers of the cathedral of Saint-Flour due to the drippings of fat laden with salt on the boards.
The curing of ham in the church can continue
In order to avoid safety problems and the presence of food moths on hams, the Minister of Culture called for the implementation of a new experiment in curing ham in the cathedral of Saint-Flour. The maturing of hams called “Florus solatium” can therefore continue, which also applies to the Cros church.
Here too, the History, Heritage and Territory association refines its hams in an ecumenical way. Of course, these are only three or four hams hung at the top of the bell tower of the Sainte-Madeleine church and sold at the village festival. But this will not be continued and the tradition can continue.
