Present every Saturday on the Josselin market (Morbihan) since March 2024, Yoann Adam represents the Loc'h salmon factorythe artisanal company based in Crac'h created by his father in 1992, specializing in fish smoking.

Passionate from father to son, Yoann took up the torch in 2018 and in turn applies the family know-how alongside nine employees.

Smoking over a wood fire

“Firm, tasty, non-greasy and well-raised products,” announces Yoann Adam, which are obtained following a process comprising several stages:

We receive fresh fish, including Label Rouge Scottish salmon, or organic from Ireland, which we salt by hand with natural salt, before smoking it over a natural wood fire straight from the Camors forest.

The fish is then offered on his stand in small packages, perfect “for improved or more festive meals”, explains Yoann Adam, adding that he does not only offer salmon, but also different species of fish and of seafoodincluding tuna, trout, herring, pollock, sardines, eels and even scallops.

Attracted to Josselin by the reputation of the market and customer demand, Yoann Adam is also present on that of Ploërmel on Fridayand at the fish markets of as well as those of Auray, while the Crac'h shop is open from Monday to Saturday.
