MWell-known in , Mingoo Kang and Chang-Ho Shin are figures on the Korean culinary scene. This summer, the first even put Mingles, his restaurant in Seoul, in the top 50 best restaurants in the world. Together, they sign the menu of this Parisian establishment, opened a few months ago by restaurateur Linda Lee, already at the head of several Korean brands worthy of interest in the capital (On the Bab, Misu). Sétopa, for “Seoul to ”, is added to the list, playing the smart neo-bistro card mixing local manners with local flavors and unleashing fusion cocktails (old fashioned and bloody mary revisited, in particular). On the menu, you should not miss the spring onion and shrimp pancake with marinated vegetables, the chicken with gochujang sauce (fermented chili paste), served for two, or the crème brûlée revisited with soy paste.

Last March, serial restaurateurs Julien Fouin and Pierre Mouquet (Glou, Grandcœur, Jaja, Bonvivant, etc.), associated with chef Eduardo Gonzalez, relaunched Casimir, the former gay stronghold of Thierry Breton known, among other things, for its legendary country brunch Sunday. Brunch has disappeared, but that’s no reason to get depressed: the room has finally found some color, and the menu turns out to be one of the best put together for the bistro season. On the menu: roast pig like a vitello tonnato (adopted), raw langoustines with ajo blanco sauce (sauce a little thick, but very pleasant overall), small fried smelts to swallow like candy, beef Wellington, untested but appetizing… The piece of choice remains the quasi veal with pepper sauce, already a must. selection of wines and nice urban terrace.
