With the star chef Benoit Neusy
The program? It is rich, mixing tastings, culinary workshops and moments of conviviality around the values of the terroir. A beautiful sensory dive in the universe of black truffle. Friday evening, the festival will offer a truffle market where you can taste and buy fresh truffles, as well as a wine bar. We can taste Catalan toasts, pasta and cream, all with truffle. On Saturday, the concept “La Truffe Starme à Four Ventes” offers an exceptional gourmet dinner prepared by chef Agron Billa (Goosse) and the star chef Benoit Neusy (the imperative of Eole) for an all -inclusive formula, of € 175. Finally, Sunday, a “gourmet brunch with buffet truffles” will be made up of the creations of chef Marc Delvenne (Le Cantil), of Aywaille, at prices of € 69 (excluding wines). “”All weekend, we will offer food/truffle and unique wines, orchestrated in our cellar “complete the organizers.
18,000 vine feet planted on seven hectares
VIVARDENT is a rising figure of Belgian viticulture. The project, launched by three wine enthusiasts (Xavier Bioul, from Sprimont; Philippe Minne, from Embourg, and Jean-Michel Jérôme, from Jodoigne) came out of the ground three years ago. They first had 18,000 vine feet plant on seven hectares, they then built the cellar, inaugurated in mid-2014 and, finally, set up a whole building dedicated to offices, storage, sale and entertainment, building which has just been finalized. “”The project develops values that are important to us: ecology, ethics, sustainability, transparency “, specifies Xavier Bioul.
On site, we will soon find wines from the Sprimont vines, but also the wines of a French partner (the Natura estate) and assembled wines, “That is to say wines made from grapes from partner vineyards “. The production takes place in a 650 m2 cellar (one of the largest in Belgium), at the cutting edge of technology and which has the distinction of being multifunction: it can be used for à la carte winemaking. “”We will produce wine for others, offer them the material or our technical knowledge. “
A store and a bar-terrace
The first 100 % Sprimontoises bottles should be released in 2025. And thanks to its 23 new tanks, Vivardent hopes to produce up to 200,000 bottles of wine per year, from vineyards in the region, half of the current Liège production. A hell of a challenge …
-The managers also wanted to develop a didactic animation component: tastings, chai visits, wine tourism, events and incentive … A store also opened its doors recently as well as a bar and terrace area to taste on site.
The three administrators have woven numerous collaborations in the region, notably on the district of Huy-Waremme, with the Comptoir des Boissons in Huy, the Horticultural Royal Society and Wine of Huy and the Domaine des Beêtres in Berloz.
