Rice is the most consumed staple food in Senegal, especially in thiéboudienne, the famous national dish. Although it is a source of energy, it has little nutritional value. To compensate for this deficit, a rice fortification program was launched in school canteens. The objective is to improve children’s nutrition, but also their results at school. The experiment, which could be extended to other regions of Senegal, is underway in Matam in the northeast of the country.
