As part of their training, during the 3e semester, BTS Bioqualim students from Étienne-Restat high school must design “an innovative product”. They therefore focused on soy, with the support of the company Sojami, specializing in organic products based on lacto-fermented soy. “The company based at the Agropole in Agen seeks and provides answers to the problem of global overconsumption of animal proteins and attempts to meet the future nutritional needs of a growing humanity. Its managers also want to promote organic production and local sectors,” indicates the school management.
Following a market study, the students made the choice of “vegan and gluten-free”. A group has developed a canned dessert (thermal sterilization) based on okara (soy pulp). The other group developed frozen sweet tartlets rich in soy.
Doors open January 25
The BTS Bioqualim is one of the three post-baccalaureate courses offered by the high school. “This two-year course allows you to acquire skills in the field of food processing and quality,” specify those in charge of the establishment.
