Today, although we are used to seeing an abundance of industrial vinegars in supermarkets, there are still a few artisanal vinegar makers in France. They are rare, but very present and cover the territory in the same places as those where the vines grow.
Cécile Giorza is one of them. In the heart of Gers, she first joined her husband. Unable to find work in her sector, she decided to go into viticulture, but did not necessarily want to make wine or Armagnac, assuming that some people have been doing this much better and for longer. In 12 years, Cécile Giorza has become the only vinegar winemaker in France. Today, at Domaine de l'Airial, she produces a white wine vinegar which won an international award a few months ago, and balsamic vinegars, each as delicious as the other.
Recently, the Magazines Elle, Elle à table and Elle decoration presented him with the Vine and Wine Professions Prize at the Prix des Artisanes 2024.
