Monday January 6, 2025, we will celebrate Epiphany. But at Toulouse, Gourmets never wait until the big day to celebrate the best pancakes in Haute-Garonne.
Michel Sarran judged the frangipane pancakes
This Thursday, January 2, the traditional (and highly anticipated) competition for the best pancakes in Haute-Garonne was held in the Pink City under the aegis of the Union of Artisan Bakers and Pastries of Haute-Garonne (UABP 31) and with a distinguished guest, chef Michel Sarran, who judged the frangipane pancakes.
“I was tasting the frangipanes. It's not really the tradition in the region here, it's more the brioche. You have to go slowly, you have to sit down and enjoy quietly. There were three/four that stood out. It's a hell of a job. You have to master the proportions, flavoring, cooking. It's not that simple. Neither does the brioche. It’s always difficult to say that out of the 18, there will only be three who will be rewarded,” explains the chef to Toulouse News.
The best pancakes
The competition was once again organized around four categories: crown of kings (also called “the Coque”), frangipane galette, Limoux brioche (made with candied fruits, a specialty of Occitanie), and the brioche creation of the apprentice kings.
#1. The best crowns of kings:
1/ Dimitri Bordon from the Apprêt Nous bakery in Cugnaux.
2/ Damien Valentie; Little Madam in Pinsaguel.
3/ Hugo Poite from the Credo bakery in Toulouse.
This is the second time that Dimitri Bordon has offered the best crown in the competition after 2024. “I feel good and happy to win. This kind of result attracts people to the bakery. It's a lot of work that I'm doing with my wife, she told me I was going to win, she was right. For the future, I would like to go to the other side and be on the jury,” explained the big winner of this category.
#2. The best frangipane pancakes:
1/ Clément Dejardin; Aux Petits Bannetons in Plaisance-du-Touch
2/ Jeremy Ferrand from the Montveillon bakery in Montberon
3/ Jonathan Gradin from Maison Blanchard in Blagnac.
“This is the first time I have participated in this competition. I'm more comfortable with frangipane than brioche. I'm happy because I fooled my former colleagues, and so they challenged me. I took on the challenge and I'm proud of it. Winning something is always nice. Doing this competition allowed me to think about the elements of the cake, it will bring us a lot of work, and it will delight the taste buds,” reacted the big winner Clément Dejardin.
#3. The best brioches in Limoux:
1/ Sébastien Baye of Tabliers Toqués in Fonsorbes (he was 2nd last year).
2/ Francis Pages from the Au Bon Quignon bakery in Toulouse.
3/ Eric Thevenon of Maison Thevenon in Muret.
#4. The brioche creation of apprentice kings:
1/ Bilel Lajmi from the Fimouckine bakery in Toulouse.
2/ Steffi Gobadois from the Feuillet Frères bakery in Bouloc.
3/ Urbain Bedot from the Fred L’Artisan Bakery in Ramonville.
