This Thursday, November 21, the Mothais-sur-feuille obtained its Appellation d'origine contrôlée (AOC). This designation is a real consecration for the producers of this cheese. Mothais sur leaf is a goat's cheese produced mainly in the Deux-Sèvres department. Its particularity is to be refined on a chestnut leaf.
This mode of refining is used since the 19th century in the farms of Deux-Sèvres. The chestnut leaf gives a unique taste to this cheese. The perimeter of the AOC extends over 240 communes located mainly in the south of Deux-Sèvres. Some municipalities in Vienne and Charente also benefit from the AOC.
16 farms produce Mothais on leaf
Mothais on leaf is currently produced by only sixteen farmer producers. It has a disc shape, 10 to 12 cm in diameter and 2 to 3 cm in height.
Its total production is 300 tonnes per year. This is the sixteenth goat's cheese to receive an AOC.
