Diarrhea, vomiting, fever…
The salmonellosis is an infection whose symptoms resemble those of gastroenteritis (diarrhea, vomiting, fever, headache).
They may appear from six hours and up to 72 hours after consumption of the contaminated product.
“These symptoms may be more pronounced in young children, pregnant women, immunocompromised individuals and the elderly”specifies RappelConso. Any risk is ruled out in the absence of symptoms seven days after consumption.
“If the product must be cooked before consumption: cooking the products (hard-boiled eggs, pastries, poultry meat, etc.) through the core at +65°C helps destroy these bacteria and prevent the consequences of such contamination.”
“Infections with bacteria of the salmonella genus represent the second leading cause of foodborne illness a Europe”informs ANSES, the national food safety agency.
They were responsible for 39% of cases of collective foodborne illness confirmed in 2019 in France.
