Events dedicated to gastronomy are not lacking in the Gers. The opposite would be surprising. But this festival is beginning and already has a special place in the Gascon landscape. From May 29 to 1er June 2024, Also the taste! come back. With a hearty menu featuring renowned chefs, local produce and a hint of South America.

For its third edition, the festival has prestigious names on the bill. For its premiere, Auch taste had Hélène Darroze and Thierry Constant as godmother and godfather. Then it was Dominique Toulousy and Philippe Urraca last year. This time, place Thierry Marx and William Candelon.

Two renowned godfathers

The first, chef of the year 2006 for Gault et Millau, has earned Michelin stars. In 2023, he opened a new restaurant in Paris, Onor. As a result, a year later, he already has his first star… Otherwise, we have seen him a lot on TV (“Top Chef”), he runs 11 cooking schools, supervises several restaurants and bakeries, and he is president of the Union of Hospitality Trades and Industries…

William Candelon no longer needs to be introduced in Gers, where he runs the only starred restaurant in the department (Puy-Saint-Jacques in Pujaudran, two stars).

More meetings between professionals

Under this high-level patronage, the festival is evolving slightly this year.

“The previous edition showed the need and relevance of connecting these actors: farmers, wine growers, restaurateurs, chefs, teachers and trainers, apprentices and students, tableware professionals and local decision-makers,” explain the organizers.

Therefore, within the framework of fiftieth anniversary of the Lavacant apprentice training center and 70 years of the Lavacant high school sitea big professional evening has been planned for Wednesday May 29.

On the menu for the day, Gastro’Mômes competition, organized by the Gers departmental council for middle school students to learn about cooking, with the chefs of their schools. At the end of the presentation of their “Top Chef” style dishes, the candidates are decided by a jury of professionals.

But also the anniversary of the CFA of Lavacant, the general assembly of the Union of trades in the hotel industry and an evening reserved for professionals at the Cordeliers cloister.

Two prestigious menus

Thursday May 30 and Friday May 31, there will be two gastronomic evenings. First of all the dinner of the Best Workers of France with the guests of the Ronde des Mousquetaires (€90, wine and drinks included).

Then, the next day, a journey through Native American products at the Museum of the Americas (€70 drinks included). Let’s not forget that corn, tomato, sweet potato, potato, avocado, pepper, passion fruit and cocoa, among others, come from there… “This exceptional evening will also be an opportunity to discover ways of preparation which are largely unknown to us, such as “nixtamal” corn, a very ancient Mesoamerican preparation consisting of soaking and cooking corn in lime water,” specify the organizers.

Star dishes on schoolchildren’s plates

Furthermore, schoolchildren will not be forgotten, on May 31, in their canteens, they will be entitled to unusual dishes in this type of place developed by William Candelon, Phillipe Urraca and Thierry Marx, such as pea soup, nougat goat cheese with dried fruits and olive oil crostine.

With local products

Finally, on Saturday 1er June, it will be the “Auch, le Goût!” market » (€30 per person, wine not included). From 9 a.m., market entertainment on the cathedral square and at the herb hall with cooking competitions, cocktails, baking, masterclasses, musical entertainment…

And from midday, Gasconnade at the Cordeliers cloister: six chefs from Tables du Gers, associated producers and the Pardailhan high school will go out of their way to prepare you a 100% local tasting menu.
