Le Baragwin is to Brest what the late L’Arsouille was to Rennes: a pioneering address, on a local scale, of bistronomy, a small temple of natural wine and invigorating feasts. A fine connoisseur of atypical nectars, the owner, Sébastien Leblay, obtains his supplies directly from the winegrowers and offers 200 alluring references. The cuisine is in tune, and focuses on fresh, local and seasonal products: in addition to the gourmet aperitif platters, the menu, short and inspired, offers and revisits classics and less classics. During our visit, it was smoked brisket terrine, oyster mushrooms, candied tomatoes, four spices…
