It is a chalet from the 70s, on four levels, nestled in the Vallée de l’Abondance in Haute-Savoie: bought in 2023 and renovated by Estelle and Thomas Flachaire, it will be transformed into the mid-February into a new mountain gastronomy table, Chalet Flachaire.
The couple, who met in 2019 at Troisgros, intend to make it a living and welcoming place where intimacy is the key word. Their new establishment will count two 45m2 suites with terraceas well as a restaurant… four tables only ! In an elegant and natural atmosphere, chef Thomas Flachaire will offer cuisine where notes of fumes, peppered or even tangy. Without forgetting the sauces gourmetwhich will punctuate the tasting menu (in three or five stages).
In terms of career, the duo has some great addresses: Estelle Flachaire worked for communications at Troisgros and the Relais & Châteaux Group while Thomas Flachaire cut his teeth at Roellinger, Marcon, and Michel Bras (in France and Japan).
