Some restaurants, although excellent overall, may be worth the trip for a single product. For the first episode of this series on “Our favorite specialties”, we are dying for the Mongolian ravioli from Une Cerise sur la Yurt: the buuz!

Opened in 2023 by the association of Zolzata and Baasansuren, two friends from Mongolia, Une Cerise sur la Yurt, in addition to the pastry and tea room side, distils a cuisine with multiple Asian influences punctuated with more French touches. Korean bibimbap, Japanese bento, Mongolian buuz or even Chinese bao at the weekend, a promise of an oriental getaway that is more than pleasant for the taste buds!

Buuz, soft ravioli to die for

Japanese gyozas, Tibetan momos, Chinese dumplings, Vietnamese and Italian ravioli, Russian pelmeni and even Turkish manti, ravioli is at the heart of global gastronomic culture. “Unlike Vietnamese ravioli often seasoned with
Nuoc-mâm, with gyozas pimped with soy and sake, the Mongolian buuz puts everything on the product, hence the importance of quality sourcing.”

“In Mongolia, the cows roam in endless fresh meadows, which produces high-quality meat. So I opted for a pretty Label Rouge veal to try to get closer to it,” Baasansuren tells us. The same goes for the vegetables, mixed with the minced meat then seasoned with good pepper and salt, they form a delicious and juicy stuffing, a bit spicy, just what is needed. The dough is thin, but quite “thick” enough to provide a perfect softness to the bite. So here we are, faced with a crazy ravioli, which starts to make you salivate as soon as the chopsticks are placed on it, bingo!
