The M6 show, “The best bakery in France”, sets its cameras in the Jura from January 13 to 17.
Hosted by Bruno Cormerais, best baker in France, Noémie Honiat pastry chef, and Michel Sarran, starred chef, the show broadcast on the M6 channel this Wednesday January 15 was filmed in Montmorot and Lons-le-Saunier.
Filming took place in July
David Gros, owner of the bakery-pastry shop and sandwich shop La Fabrik, and his partner Anne Sophie Bride took on the Mie’Stérieuse by Katty Prévalet and Rémi Hanssler located on rue de Macornay in Lons.
“A few weeks before the filming which took place on July 23, we received information in order to prepare ourselves” says David Gros. “It was very friendly, with a very nice jury, but we also knew that everything had to be impeccable, and that our visitors would spot all the details.”
Throughout the show, the bakers were rated on several themes:
“The first impression” corresponds to a presentation note of the products and the store, as well as the welcome. The Fabrik gets a nice score of 8.5.
Concerning “the favorite product”, David Gros chose to present his Jura pie with pears, walnut cream and crumble. The product appealed to the jury who rewarded it with a nice 8.
For his “signature bread”, the baker reveals the recipe for a bread with morels, vin jaune and Comté specially created for the competition. “A real local bread with local products” explains David. It scores a magnificent 9 out of 10.
The last theme “The jury’s challenge” consists of making a side dish with eggs in meurette cooked by chef Michel Sarran. David Gros, for this test, proposed a “grignette”, a flaky toast with tomato and Espelette pepper with Madeira jelly decorated with edible flowers and chives. The jury appreciated the originality of the creation, which it awarded with an 8.7 out of 10.
After calculating the scores, the La Fabrik bakery was ahead of the Mie’ Stérieuse de Lons with an overall average of 8.5 out of 10 compared to 7.6 out of 10 for their competitors.
“It was a tiring day, but very rewarding, and we received compliments from the jury, who see everything, and who were able to see our investment. And then it’s not every day that we get to be on TV. It remains a great experience,” laugh, delighted, David Gros and Anne Sophie Bride.
At the end of the week, we will be which of the 5 bakeries having won their duel will be qualified to represent the department at the regional level.
