It is a young woman, Awen Franceschi, representing the PACA region who is the winner of the competition for the Best (re) Apprentice Chef in France. This was the decision of the jury for the national final organized on Monday at the Vatel Academy in Lyon in the presence of three-star chef Eric Fréchon, sponsor of this 70th edition.
Twelve finalists
In the running, twelve candidates selected during the regional finals which took place over three months across the country and which saw 120 apprentices compete. The finalists had a menu to create with as a starter tandoori breaded frog legs, browned in a pan, parsley juice with brown butter, as a main course a Bresse Pigeon glazed with honey, pine nut crumble, fennel compote with cumin, devil sauce and finally for dessert a “Guanaja” chocolate soufflé.

“Congratulations to the winner, who demonstrated exemplary consistency, whether on her starter, main course or dessert. This competition offers apprentices a fantastic opportunity to discover the excellence of French gastronomy. It’s a great example of the transmission of our know-how, an ideal transition between the school environment and the professional restaurant environment,” Eric Fréchon emphasized.
Note that for more than 70 years, the Maîtres Cuisiniers de France association, chaired by starred chef Christian Têtedoie, has strived to preserve, transmit and promote the great French culinary tradition.
