In Royan, the Lopez confectionery shares its recipes in a book

En one hundred years and four generations, the Lopez confectionery has reached the rank of institution. The sweet adventure took its roots in Cognac in 1924, continuing in , in Ronce-les-Bains, but since 1977 and the installation of Gisèle and José Lopez on the seafront, the family history has expanded. written to Royan. While their eldest son Romain chose to open a restaurant in Mornac-sur-Seudre, Manuel and Catherine Lopez entrusted the management of the brand in 2022 to their younger son, Maxime, 33 years old today, “fallen in the child’s pot.”

Thirteen years after a first book written by his father, his youngest son felt “an expectation” from the numerous and loyal clientele of the Royan institution. The idea for a new book was born, “Confectionery Lopez, recipes of century-old know-how” (1), published by Éditions Maison. A hybrid work, both homage to the family saga and recipe book, illustrated in an almost artistic way by photographer Denis Bibbal.

What faithful lover – and a little comfortable in the kitchen – has not dreamed of reproducing, for example, broken wood, one of the emblematic confectioneries of the Lopez house? Maxime Lopez offers the recipe, “but in reality, I am not revealing any manufacturing secrets, since it is first and foremost the know-how, the work with the sugar that makes the product”.

Maxime Lopez extended the reader’s pleasure by concluding with a – again – gourmet chapter, but leaving carte blanche to four chefs from the Pays Royannais with the “constraint” of incorporating into their recipe a product made by the Lopez house. “The book itself echoes our roots in this territory and the four chefs themselves highlight local products. Like the oyster, which my brother serves with a vinegar-shallot sorbet. » Or asparagus, from which Kévin Morice makes a velouté that the Breuilleton chef combines with ice cream… with parmesan.
