The West Indian bar Glou Café has closed its doors on Boulevard de Strasbourg, in Toulouse. It is taken over by the manager of Bistrot Galien, who will transform it into a brasserie, with a festive atmosphere in the basement.
Established for ten years at the corner of Boulevard de Strasbourg and Rue Bayard, in Toulouse, the Glou Café has closed its doors. The bar with its Caribbean atmosphere, renowned in particular for its choice of rums and its caliente atmosphere in the cellar, thus concludes a wonderful festive adventure, which had started in the Victor-Hugo district, at the time when it was called the Glou-Glou.
The place was bought by Galien Chevrel, the manager of Bistrot Galien, opened in 2022 at Place Dupuy. He is preparing to transform it into a brewery, which will be open all day, 7 days a week. Named Boulevard 36, in reference to his address, this restaurant will give pride of place to local and organic products, with vegetables grown by his market gardener wife. The decor will retain the Toulouse bricks for an authentic appearance and will add a touch of modernity. The brasserie will be open early in the morning for coffee and will serve continuously, “to welcome all audiences”, until late in the evening.
4 months of work
In the basement, there will be a different atmosphere, with parties organized regularly, a carefully designed light show and a program that will invite DJs. “I want to work on the short circuit, locally, while keeping the festive side,” explains Galien Chevrel. “It’s a big challenge for me, because it’s going to be a big project.”

He is in fact preparing for four months of work, which will completely transform the interior and bring it up to standard. He will also have to break the solid construction which served as a sidewalk projection, a constraint imposed by the Toulouse town hall on all establishments with this type of veranda. Instead, he will install a beautiful terrace, which will be at an angle with rue Bayard. Opening planned for March-April 2025.
