The Panoramic of the Hippodrome de la Cépière, in , and Bistrot & company, at the Orangerie de Labège, will become the “Bouillons Toulouse” on January 20. A new concept initiated by Thomas Fantini, from Maison Pergo.

Two “Toulouse Bouillons” will open their doors on January 20, at the Panoramique de l’Hippodrome de la Cépière, in Toulouse, and at Bistrot & company, at the Labège orangery. These two establishments, managed by Maison Pergo, the group led by Thomas Fantini, are preparing to change their identity to transform themselves into a new concept, which is currently quite trendy. “Broth is a French catering concept, at the origin of bistros, which allows you to eat well, at good prices, with good products,” summarizes Thomas Fantini. The idea is to recreate “good old traditional dishes”, such as beef bourguignon, veal blanquette or shepherd’s pie.

The group, which has become a major player in event catering in Toulouse, with around fifteen establishments, will continue to focus on regional products, cooking specialties such as Gers poultry, Toulouse sausage, mash or aligot.

The decoration of the two restaurants will not be changed. That of the Hippodrome was recently redone, while the Labège orangery, which already has an old-fashioned decor, will simply add a few screens for a festive side, with the broadcast of matches. They will have a charter and a common card.

“We are using the strength of the Maison Pergo group to maintain consistent purchase prices and accessible rates. We will be on an average ticket at €20 or €22,” continues Thomas Fantini. “We hope that this will be a model that works, eventually develop it later.”
