She dared, she held on and today it’s paying off! Pricillia Lebon, the young chef and owner of Ogustin in La Vacquerie and Saint Martin de Castries on the heights of Hérault, has just won the listing of her restaurant in the 2025 Michelin guide. A hell of a gamble even at the start for this young 33-year-old chef, self-taught who took over the village inn; ” It was a friend who told me about this restaurant to take over, when I went there, I immediately appreciated the place, the environment, the nature for my horses.”
Pricillia Lebon first offered traditional cuisine like what was done before her arrival, after Covid, she decided to do gastronomy, a double challenge in this rural sector one hour from Montpellier and in a village of 200 inhabitants. ” There were difficult times,” she confides “as I own it, put the establishment, repair costs and staff salaries before yourself“Pricillia Lebon is at the head of a small team, there are four of them with her” we are all involved in the design of new dishes, friends too,” she smiles, who are our first to give their opinion.
Pricillia Lebon offers eco-responsible cuisine in a short circuit and works with breeders and local producers. Word of mouth has done the rest, with a clientele so far within 40km of the village, a little more important in summer with tourists. Entry with a laudatory comment in the 2025 Michelin guide released mid-December is already having an effect on reservations. ” Friends, neighbors, people we work with, the town hall came to congratulate us, it’s also a spotlight for the whole village.”
The Ogustin restaurant offers 15 seats from Thursday to Sunday.
