FRANCE 3 – SATURDAY SEPTEMBER 14 AT 10:35 AM – CULINARY MAGAZINE

A chef turned food columnist and then host of the weekly show “Outremer.gourmand”, Brice Laurent Dubois had accustomed us to welcoming his peers, whether chefs or starred chefs, to talk about spices and concoct appetizing overseas recipes.

Change of register for the third season, during which he invites personalities from France Télévisions, such as Moïse Santamaria, from the daily series Such a big sunon September 21, or the actor Lucien Jean-Baptiste, on September 28. But for his return, Brice Laurent Dubois chose the most transgenerational of them: Samuel Etienne.

Born in 1971, the journalist is, in fact, the only one capable of bringing parents and grandparents together in front of their small screen, when he presents (on France 3 since 2016) the unshakeable game show “Questions pour un champion” (launched in 1988); and of building loyalty on the Twitch platform, where he has been active for four years, 938,000 followers, seduced by this “daron” streamer with disarming frankness – including in his new bi-monthly show, “MVP: ma vie pro”.

Some people saw the fifty-year-old shirtless, revealing his tattoos, on Sunday, September 8, for a good cause during the Z Event 2024, the charity marathon organized online by the French streamer ZeratoR, with around thirty other web stars, and which raised more than 10 million euros. They find him today dressed, adorned with an apron and… Pokémon bracelets, alongside Brice Laurent Dubois, to prepare a “sole sauce chien” on a sweet potato mousseline.

Two reports

Without revealing the recipe, just know that there is no canine on the menu, the “dog” being a knife, which strangely Samuel Etienne handles with less skill than the mouse on his computer. On the other hand, we find his high verbal flow (Samuel Etienne talks a lot), which Brice Laurent Dubois channels with tact and firmness, to avoid, for example, too long digressions on the bondamanjak, emblematic small fragrant pepper of the Antilles (where the “dog sauce” originates).

If we also find, in this new season, the very successful credits, with graphics reminiscent of the paintings of Douanier Rousseau, we notice the timbre of Marie Montuir’s voice, in the commentary of the two reports of the show. The first, filmed in Tahaa, in Polynesia, follows the last fisherman who perpetuates a kind of “anesthetic fishing” and allows us to learn that Samuel Etienne’s father, now retired, was a fishmonger.

The second follows a mountain guide and his group during the dizzying ascent of the Trois Salazes (at an altitude of 2,000 meters), on the island of La Réunion, known for organizing the Diagonale des fous, a legendary 170-kilometer ultra-trail. That’s good, Samuel Etienne has already run twenty-three marathons.

As in previous seasons, the “Tasting” sequence allows you to meet an artist from overseas: this week, Martinican comedian Noam Sinseau, whose show he describes as« ego trip », Popcorn superstar, is currently showing at La Nouvelle Seine in Paris. “Makoumè” means “faggot” in Creole.the artist says, with disarming frankness… Would you like some more sole?

« Outremer.gourmand », show presented by Brice Laurent Dubois (Fr., 2024, 26 min). Broadcast every Saturday on France 3 and also available in replay on France.tv and La1ere.fr.
