Sustainable gastronomy: 94 Green Stars recognized in France by the Michelin Guide

Since 2020, the Michelin Guide has created a specific distinction to reward restaurants that promote sustainable gastronomy. In 2024, it has distinguished nine new pioneering and committed addresses in the field, bringing to 94 the number of restaurants which will benefit from this year. This makes France the country with the most Green Stars. Currently, 522 establishments hold the distinction worldwide.

The nine new restaurants awarded the Michelin Green Star, with remarkable and varied actions and commitments, are: La Cour de Rémi in Bermicourt, Le
Domaine du Châtelard in Dirac, Les Jardiniers in Ligré, La Bastide de Moustiers in Moustiers-Sainte-Marie, The Art of Living in Narbonne, Bellefeuille – Saint James Paris in Paris 16th, La Galinette in Perpignan, En Pleine Nature in Quint- Fonsefrives, Le Saint Hilaire in Saint-Hilaire-de-Brethmas.

Specific commitments taken into account for the Green Star

To obtain a Green Star from the Michelin Guide, a restaurant must meet strict criteria in terms of sustainable development and eco-responsible practices. Obtaining the Green Star requires a rigorous audit by Michelin Guide inspectors, who evaluate all of these sustainability criteria. Here are the main elements taken into account:

Responsible sourcing

• Favor local, seasonal products from short circuits
• Use organic ingredients and limit animal products
• Choose suppliers committed to a sustainable approach

Waste management

• Implement selective sorting and composting of organic waste
• Reduce food waste
• Use recyclable or reusable packaging

Energy and water savings

• Optimize water and energy consumption (LED lighting, energy-efficient equipment, etc.)
• Favor renewable energies when possible
• Raise staff and customers’ awareness of eco-friendly actions

Social commitment

• Promote professional integration and local employment
• Support charitable or environmental associations
• Promoting sustainable food education
