An intimate menu
On the menu, everything is seasonal, from local producers, often from the area. “It was a risky bet, since today we can afford the luxury of eating products from all over the world at any time of the year. But I had this desire to show that with good products, from home and well prepared, you can just as easily enjoy yourself and be surprised by a thousand flavors!”
Since she does everything herself and also grows her own vegetables, fruits and herbs, Annie Thiry has chosen to offer a small menu, which changes every two weeks. And there is something for all tastes and diets. “I offer a vegetarian dish, a meat dish and a fish dish. Each one is adaptable for gluten or lactose intolerances as well as various possible food allergies. When a customer comes, we take the time to see with them what “It is possible to do, but we always come out with a tailor-made and adapted dish. As I do everything myself, I know exactly what each plate is made of. We can come here with our eyes closed.” And the little ones are also pampered. “I always have a children’s dish, because I want to be able to accommodate everyone. I create my menu every fortnight with an entire family in mind, because it is important to me that everyone feels good here.”
Lots of regulars
What makes him happy is when his clients leave feeling light. “You don’t come out of here loosening your jeans because your stomach is tight. Tasty and healthy cooking, for me, is not about feeling “full”, but about feeling satisfied just as much as possible. It is, I find, a more pleasant sensation, and it is the one that I try to give on each plate.”
On weekends (and especially in summer) it is important to remember to book: the restaurant is often full . “We have a lot of regulars, some even come here every week and tell me that ‘it’s a change from what they’re used to cooking’. I also like taking the time to talk to customers about what they’re used to. that they liked, liked less, if they had a good time. I always do a tour of the room at the end of the service, it’s important to me.”
