“A great revenge”: this pastry chef created “Sans Gluglu”, boxes of gluten-free products

The site “Sans Gluglu” sells boxes of gluten-free pastries to cook at home. Developed by Pauline and Hugo, two people from living in the Soupetard district, it aims to make life easier for those who are gluten intolerant.

“It generated so much anxiety in my personal life, and in my work.” Six years ago, Pauline Grelet was diagnosed as celiac (gluten intolerant). A cold shower for this Toulouse pastry chef, who comes into daily contact with gluten. “I thought I would no longer be able to work,” she says. “At first, for me, all gluten-free products were neither beautiful nor tasty.”

But she could not get over her passion, and finally took a gluten-free pastry course at the ENSP. “I felt reassured and more legitimate. I could finally see my illness as a strength and an advantage.” Then it was her meeting last year with Hugo Clavé, a digital enthusiast, that would change everything. They would merge their skills to create the site “Sans Gluglu”, which sells boxes of products for cooking gluten-free pastries.

The French delay in gluten-free diets

For now, three boxes are on sale: lemon meringue pie, vanilla choux buns, and chocolate trianon. Inside: bags of flour, dry goods, utensils, a recipe booklet, with a QR code that links to a YouTube video. You have to add the fresh ingredients, like eggs, butter, etc.

“Our goal is to participate in inclusion, to allow people, even those who live in remote areas, to have access to gluten-free products and to treat themselves,” explains Pauline. “We traveled to Italy, the Netherlands, Spain. We could see that in , we are behind, it is more complicated to find products in supermarkets, or options in restaurants,” adds Hugo.

Since the launch in February, several hundred boxes have been sold. “A great revenge” for this 30-year-old pastry chef. In the future, they would like to see their boxes sold in organic grocery stores. But also launch new savory recipes, and more accessible pastries, like cookies.
