If the person does not have high cholesterol, they can consume between eight and twelve per week. On the other hand, for a person who has high cholesterol, it is better to eat four to six per week.

These recommendations concern only egg yolksbecause they have “a significant amount of cholesterol”, estimates the specialist. So no limit on the consumption of egg whites.

A good source of protein

But this food also has benefits. “Eggs have very interesting nutritional benefits,” reassures the nutritionist.

They contain protein, approximately 12 g per 100 g. “And they have good nutritional quality, because the amino acids are present completely,” explains Isabelle Proudy.

Amino acids are the molecules that make up proteins. There are 20 of them.

Eggs contain many essential amino acids. “Their essential amino acid composition is perfectly adapted to human needs», underlines INRAE, the Food Research Institute.

Be careful when cooking

However, as with many foods, all of these benefits can be altered by cooking. The nutritionist recommends avoiding overcooking them. “The best are soft-boiled or soft-boiled eggs,” explains Isabelle Proudy.

And be careful, for fans of fast food, microwaving can quickly lead to overcooking. “We don’t know the temperature, unlike an oven for example, so we have to remain vigilant,” warns Isabelle Proudy who recommends using this cooking method “to help out.”

And if the egg is heated in a plastic container, there is a risk of micro-plastics passing into the food.

As for the breeding method, it is better to eat eggs from chickens that are fed with seeds rich in Omega-3“that way, we find them in eggs,” adds Isabelle Proudy. Or even favor chickens raised outdoors, if they eat grass. But there, it’s difficult to know.
