Very quickly, he had to adapt, opting for a dark kitchen in Waterloo, before opening his first establishment in the same city in March 2023.I was happy to see that it was working well, but I didn’t want to stop there. That’s where Uccle’s opportunity came.”
Passing by a vacant premises in Uccle every day, Christophe saw this as a sign. “I rang the neighbors to get the owner’s phone number. He was convinced by my project and we quickly signed the rental of the premises.”
Original recipes
The concept of Hachis de Cricri is based on simple but tasty recipes, based on meat or vegetables, like its favorite recipe: Cricri, which uses the principle of Liège salad, with beans and smoked bacon, accompanied by molasses. pomegranate. The recipes are accompanied by different kinds of mashed potatoes: plain, garlic-thyme, oregano, or sometimes more original, like that with smoked black tea. “I like to adapt to the seasons and meet people who influence my recipes. For example, I created a hash with chicory deglazed with whiskey after talking with a wine merchant from Waterloo.”says Christophe.
Prices vary depending on the meat chosen, but remain reasonable for a 400 gram portion. “It costs around €12 per portion. I ensure that the price is fair, despite the increase in raw material costs. Compared to a pasta dish or a pizza, it’s a fair price.” Customers can also bring their own containers, with dishes being deposited to encourage the eco-responsible approach.
This project also has a personal and historical dimension for Christophe. During genealogical research, he discovered that his family, the Grimmiaux, had roots in Uccle, linking them to the castellan of Saint Job. “A paving stone of the square belongs to me, in a way”he smiles.
