“This book is my signature”

The is a country, the Loire is a civilization. Christophe Hay is never short of projects. In this month of October 2024, the two-star chef in the Michelin Guide is publishing a book entitled The Loire, culinary treasures. Inside, it offers 20 freshwater fish cooked in 50 different recipes. It also explains the de-arning technique.

“It’s an important day for my house”rejoices the head chef. For a long time, he had formulated a dream: “restore the nobility of our land”.

“By settling on its banks, I chose my native Loire as my chosen land and as a setting for my culinary inspirations”he writes in the introduction to his work.

One year of work

So he worked “for a year to put this book down” which demonstrates that freshwater fish deserve to appear on the biggest tables. “Ten years ago, not many of us chefs were wondering about freshwater fish”recalls the chef.

“Editions La Martinière made people available to me to help me talk about the Loire”continues Christophe Hay.

The book, which costs 45 euros, will be on sale in all good bookstores in the region. “This book is my signature”concludes the chef.

Remember that on June 27, 2022, Christophe Hay opened his Fleur de Loire complex in . Located in the former hospital center, the establishment has two restaurants (Christophe Hay and L’Amour blanc), a pastry kiosk, a five-star hotel and a spa.
