Editions Ulmer publishes “Where the rice smells of mango flowers” by the Indian chef living in Marseille Zuri Camille De Souza.
ULMER EDITIONS – A book of memories as much as a recipe book, this work with a wonderfully evocative title transports us to the southwest of India on the trail of his family roots. The chef tells her story, finding in her memory emotions that appeal to all the senses, memories of colorful markets, of snacks bought and nibbled in the street, of family kitchens emanating delicious scents, of shared meals, of expertly spiced dishes. She draws on her childhood memories and revives forgotten flavors through around fifty savory and sweet vegetarian family recipes. Rediscovering its roots and celebrating its culinary heritage were at the origin of the project. We follow Zuri Camille De Souza who opens her trunk of memories for us with her family and cooking is at the heart of this nostalgic evocation. Each recipe tells a gourmet story from India between Bangalore, Goa and Pune. She pays tribute to the women of her family and to this region of southwest India that she carries in her heart. This book can be read with as much emotion as greed and develops in the reader a great desire to go and explore these markets, to taste a puri in the stalls that the author describes with so much love and precision that she gives us mouth watering. Home cooking, street food, each recipe is a moment from the past that she delivers to us with passion. The book is illustrated with numerous photos taken in the street and in the markets, landscapes as well as photos illustrating these truly authentic recipes. Text and images beautifully convey Zuri Camille De Souza’s love for this land where she grew up and lived with people who are dear to her.
At the end of the book, an index provides information on the basic techniques as well as the ingredients of Indian cuisine.
