Beef, cheese, the most famous folding knives in the world and lots and lots of people passing through, this is the revenge of Aubrac. A territory that has managed to escape its splendid isolation and promote its products. The battle against Thiers (Puy-de-Dôme), the capital of cutlery, has taken on an epic dimension.

Every year, between 250,000 and 300,000 visitors wander the streets of the town of Laguiole. In a department of Aveyron that has a “Most Beautiful Village in ” every 10 kilometers, the squat silhouette of this large mountain town is not the most remarkable.
It is not its old granite houses that make the little capital of Aubrac sparkle.
The commune of Laguiole has 1,246 inhabitants and 1,118 jobs. Few towns in the Massif Central can boast such a ratio. This prosperity is evident in the main street.
