In the kingdom of the baguette, where on average a French person eats half a baguette per day, how to choose the bread best suited to your taste and nutritional needs.

But there, a young father was stunned when he opened a package of industrial sandwich bread that he had started before summer. “There wasn’t the slightest trace of mold. So I wondered what dirt was in there and the most industrial bread I had ever bought in my life,” confides Marc.
On this package from a well-known brand: emulsifiers and thickeners are there. E471, E322, E481, E415… Two are even classified “unrecommendable” by the consumer defense association UFC-Que Choisir.
Industrial bread is often cheaper. The sandwich bread in question is priced at 3€20 per kilo on average, compared to more than 7 euros in bakeries. A little luxury but when it comes to ingredients, it fits on the fingers of one hand: flour, yeast, sugar, milk, butter, we have peace of mind.

It's the same problem for the baguette and the tradition, which is sometimes more than thirty cents more expensive. But tradition has a regulated list of ingredients (by the decree of September 13, 1993 known as the 'bread decree'), so you are sure to know what you are eating.
As for flour, we prefer it whole: it contains more fiber, it is better for your microbiota, and to regulate your hunger. If, on the other hand, you need to eat less fiber, for digestive reasons, spelled bread is a good alternative. And old flours are coming back into fashion: rye, buckwheat, corn, there is something for all tastes and each with its particular nutritional contribution, it is also good to vary your diet.
What daily amount?
Bread is an important source of energy: it contains carbohydrates, that is to say slow sugars. If we have eaten a dish of pasta or rice, we have already had a dose of starchy foods to which the bread is added. So if you really want a cheese platter accompanied by a good baguette, ok, but it rather becomes your main dish accompanied by a salad. And we pay attention to our feeling of satiety to regulate the quantity.
Breakfast is not necessarily the ideal time to eat it. We can recommend the fascinating books of the biochemist Jessie Inchauspé, known for her works signed “Glucose Goddess”. She advises eating proteins for breakfast (eggs, yogurt, bacon) and avoiding bread, cereals, oatmeal to regulate your blood sugar levels. If you are too addicted to your toast, at least try to avoid jam, instead opting for cheese or a slice of ham with it.
