VIDEO. The success story of Thomas and Nicolas and their “French Cinnamon Rolls”

It was in the United States, in 2021, that they discovered Cinnamon roll bars, the famous cinnamon buns that are all the rage across the Atlantic. Nicolas and Thomas have clearly grasped the potential of this comforting cake, which originally comes from Scandinavian countries. The two young men, aged 22 and 23, get into the kitchen and revisit them “French style”, adding a layer of crumble, speculoos, lemon cream or even caramel.

This farandole of Cinnamon rolls, marketed under the “Rollsy” brand, was initially designed in a dark kitchen in in 2022, before the inauguration of a first store last July, rue Tiquetonne, in the 2nd arrondissement of . Customers flock, not hesitating to travel a few kilometers from the inner suburbs to treat themselves to one of these brioches. And every day, the queue in front of the small shop grows a little longer at snack time.

This success story began in Maisons-Alfort, in Nicolas’s mother’s kitchen, where the duo of sprinters, who at the time knew more about athletics than pastry, tested their first rolled pasta. At school, Thomas focuses more on the duo’s social networks than on the lessons given by the teachers. Nicolas, who left high school in his first year, is refining the different roll recipes. Then in the evening, after athletics training, the two boys deliver their orders received during the day.

Very quickly, the two friends racked their brains to professionalize their project and shared their adventure on social networks. “We filmed and told everything. Our stages and our struggles. From our meetings at the bank, to our meeting with a marketing team, to our research on Leboncoin. The videos worked really well because people identified with the project,” explains Thomas.

Today, the two friends sell almost 1000 rolls per Saturday. “That’s a big emotion,” says Thomas, who is looking towards the future. “We need to think bigger and open a new store! »
