According to exegetes, the Three Wise Men were no more kings than you and me. Nevertheless, tradition likes to crown those who come across the bean hidden in the frangipane (or in the brioche, but almond paste is so good…) on January 6. But we no longer give too much importance to the date, as galettes des rois are now available in certain bakeries from Christmas Eve until the end of January.
In the canton, a few addresses stand out from the crowd. There Crissier Town Hall Bakeryobviously. Its pithiviers for five or eight people (30 fr./40 fr.) are available from January 3. For those who don’t want to leave the city, they can be found at L’Impression Café, on avenue Ruchonnet (order recommended).
Also in Lausanne, the Royal Savoy makes its crown from January 4 to 31 (to be ordered 24 hours in advance). Filled with vanilla almond cream, it is garnished with caramelized apples in salted butter (38 fr. for four people).
Further up, in Marterey, that of Antoine Chopin and Arnaud Dousse, under the sign ofAcarréalso deserves tasting. It is made with caramelized croissant dough and almond cream (36 fr. for six people). As the word has already spread widely among gourmands, it is better to order it 48 hours in advance.

In Yverdon-les-Bains, the excellent pancakes Gerber-Wyss Bakery are also essential. In previous years, they even contained a special bean: sesame for a meal for two at the gourmet restaurant of the same name. We will soon know if this is also the case this year.
