A second participation for this young breeder from Bresse Jurassienne at the Glorious of Louhans (Saône-et-Loire) which took place on Saturday December 14 in the presence of the president of the Bresse Interprofessional Poultry Committee Georges Blanc.
A “hopeful” category reserved for young breeders which is the case of Pauline, established two years ago after taking over the family farm in Courlaoux, the 4th generation. A great reward which represents a year of work raising Bresse poultry, the breeder presented 5 batches of two rolled Bresse chickens, i.e. 10 birds.
In the big category next year
The jury, made up of professionals, restaurateurs, and other butchers, rewarded this lot with poultry that exceeded 2.5 kg or even 2.8 kg each. A judgment whose criteria are noted on the state of perfect fattening, a fine texture, white flesh and especially marbled sign of taste quality and rolling already at the top.
When receiving her prize from Rémi Gauthier, president of the Poulardiers de Bresse brotherhood, the breeder promised to return to present her poultry in the large category next year in Louhans.
