The setting is idyllic for hiking, cycling, canoeing and pétanque. But the objective of the La Coudraie restaurant, located in a corner of nature on the banks of the Marne in Montévrain, is above all to satisfy the taste buds. After a few months of waiting to have a cuisine worthy of its chef, Sébastien Crison, a regular at the great Parisian establishments, the restaurant is now ready. Wednesday December 4, 2024, the whole team came together to celebrate this opening, in due form.
Working on good products with a starred chef
In a festive atmosphere, a large buffet sets the tone for what the La Coudraie menu will be: bistro-style diningwith mostly French dishes. Michelin-starred chef Sébastien Crison explains: “We offer 100% homemade, seasonal cuisine with local suppliers.” His secret to quality cooking? : “Lots of love,” he whispers.
It's simple cooking, but the right products can make all the difference.
Example ? A fillet of sea bream, fine carrot puree and a crunchy vegetable vinaigrette; a dish that can be enjoyed for 24 euros. The menu also offers revisited entries like the lentil velouté with Saint-Faron and golden croutons for 10 euros. The melting and crunchy effect gives “a texture that wakes you up,” explains the chef.
Today, the place offers a condensed menu, for all tastes, with a vegetarian dish, platters to share and options for children at 14 euros. Dishes range from 17 to 24 euros. And for lunch, the starter, main course or dessert menu is 22 euros, the whole set at 28 euros. You will be served, among others, by Bérengère Presle, room manager, who takes his job to heart: “I love pampering customers! », she smiles.
A three-star hotel and a heartfelt project
In the room, Etienne Pagny, the originator of the project, is all smiles in front of his guests. It is the culmination of a long project and a heartfelt, very family project. “It was my mother who came up with the name,” he explains. His sister-in-law Hortense Le Parc, director of the establishment, welcomes the arrivals – around 250 people were expected. Christophe Martinet, whose father, a baker in Montévrain, supplied the old Villa du Métro, is also associated with the project. They all grew up here and are happy to get involved here. Another satisfaction that brightens the evening: the hotel had received its 3 stars the day before.
When the mayor of Montévrain, Christian Robache, speaks, it is to congratulate “these entrepreneurs who have a sense of work and who invest for the future”. All this by taking up places of history. This old building, long abandoned, belonging to the SNCF, deserved to be highlighted, underlines the mayor.
Today completely renovated, the building has regained its youth. Inside, the large windowed room allows you to enjoy the bucolic atmosphere and the terrace is open on sunny days. In addition, there are still places to celebrate the New Year there. The team hopes that the place will please!
