What if to make your cheese platter for the holidays, you tried the Italian menu by serving Parmigiano Reggiano? In France, parmesan tends to end up on pasta, but it can be enjoyed perfectly. Skip the grated, choose a cut piece with several maturations, and experience the tasting. But since we are in France, creating a food/wine pairing seems essential.
Wine/parmesan pairing
There are over 500 cheeses in Italy, but we will therefore focus on the Parmigiano Reggianowhich benefits from a PDO (or rather DOP in Italian: Denominazione di Origine Protetta). It meets precise specifications, and its production area is strictly delimited. To serve him, he therefore deserves many considerations.
So we asked the Meilleur Ouvrier de France Sommelier Xavier Thuizatwho officiates at Crillon, what wine could accompany parmesan. However, we had one criterion: not to offer a bottle that was too expensive, and to be able to treat yourself to a bottle for around €30still responding to a festive evening. His answer is in the video below, with advice on also serving the cheese at the right temperature.
Well, we also tell you in writing, Xavier Thuizat recommends a Vin Rivesaltes Ambré. But listening to him talk about it, it already makes you want to move on to the tasting!
