This edition promises a return to basics with a spotlight on local products, a vibrant tribute to Paul Bocuse and his love for French gastronomy.
During the press conference last October, the candidates discovered an exhilarating challenge involving venison, foie gras and tea. These ingredients, carefully selected, invite you to enhance the authentic flavors of the land.
The terroir in the spotlight with the plateau theme
Roe deer: A noble meat with wild flavors, supplied by METRO, will be prepared in three pieces, accompanied by two garnishes and a third in addition.
Foie gras in hot pie: A true emblem of French gastronomy, supplied by Rougié, it must be integrated into a gourmet and refined garnish.
Two-tone ravioli and tea parfait: An original creation where ravioli will accompany a venison pâté infused with Dammann Frères tea, bringing a touch of unique sophistication.
Each chef will also have to integrate a fruit from their country of origin into their creation, thus strengthening the link between culinary creativity and national heritage. This theme perfectly illustrates the spirit of the Bocuse d'Or: a balance between innovation, respect for products and tradition.
Celery and seafood for the plate theme
The second challenge will highlight celeriac, branch celery, lean celery and lobster. These ingredients, to be worked in compositions that are both technical and artistic, bring out the richness of maritime and Mediterranean terroirs.
Celery in two textures: The celeriac will be cooked in two whole pieces, while the celery stalk will be presented in 16 individual toppings.
Lean and lobster: These seafood ingredients must be served directly on the plate, accompanied by a hot zabaglione with lobster juice, added just before tasting.
This event allows chefs to fuse modern techniques and traditional flavors, while showcasing their national culinary influences.
