On October 14, 2024, at Ferrandi Parisunder the eye of a jury composed exclusively of Best Workers in Francetook place the final of the 7th edition of the Marcel Le Servot Trophy organized by the Chefs of the French Republic.
The six candidates – including Ethan Chavet, a high school student from La Guerche-de-Bretagne (Ille-et-Vilaine) – had 4.5 hours in the kitchen to prepare the two recipes according to the imposed themes: Sylvestre guinea fowl pie in two textures for the main course and a Mont Blanc for dessert.
Value learning
Under the presidency of Georges Roux, Honoris Causa 2023, the chefs judged both the creativity, the creation and presentation of the two dishes and of course the taste quality. In the kitchen, the jury noted the candidate's work organization, hygiene, cleanliness and good management of raw materials.
Through the organization of the Marcel Le Servot Trophy, intended for student cooks, from professional Baccalaureate to BTS level, under 23 years old, the Cooks of the French Republic are keen to promote training and learning the catering professions.
“The competition required the young candidates to produce a dish and a dessert, the creation and production for eight people of a Sylvestre guinea fowl pie in two textures, accompanied by a zero waste sauce, served in a gravy boat and an individual free garnish served on the dish: cabbage in all its forms. The dish was to be accompanied by an open timbale of macaroni with autumnal flavors, in a single piece, served separately. And a dessert, served individually, on the theme “Mont Blanc” while retaining the fundamentals,” explains the organization.
An internship in state kitchens
The overall cost should not exceed €200, for eight, or 25 euros per person.
This competition acts as a springboard for these young people who will soon enter working life, always with the desire to learn and surpass themselves.
The jury of Meilleurs Ouvriers de France praised the creative work and technical skills of the young candidate Ethan Chavet, 19 years and high school student at Sainte-Thérèse in La Guerche.

In addition to the distinction, Ethan won a one-week immersion course in state kitchens (Élysée, Matignon, Senate), a check for 1,500 euros given by the Halles Métro, for the school, a Degrenne Paris silver tray and numerous prizes from our partners, including an EpakPro solution kit.
