Among the 173 baguettes presented that morning, the one proposed by the winner stood out and convinced a jury chaired by Nicolas Bonnet Oulaldjdeputy to the Mayor of in charge of commerce and crafts. This jury was made up of representatives of large professional federationsjournalists as well as six Parisians drawn at random.

Criteria

The selection criteria included the quality of cooking, taste, consistency of the crumb, honeycomb and appearance of the baguette.
