Two new stands will soon open at the Toulon market halls

In a concept like the halls, as soon as a stand is closed, the whole atmosphere suffers. Pablo Franco is well aware of this. Since his arrival at the head of the halls of Toulon, six months ago, he has had to deal with several departures of traders.

But today the news is good. “It took some time, but we are about to sign with two new concepts. We did not want to rush. We have to take into account several criteria. The new stands must fit our positioning and not compete with others.”

Finished the bakery

One of the new proposals will replace the original Atelier. But no more bread and pastries on the horizon. “We tried for several months to find a baker. But it was very complicated. For a craftsman, who does not open in the evening, it is more complicated to be profitable. So we changed our approach.”justifies the director.

Result: it is finally a Polynesian who comes to settle in. On the menu, raw fish, crispy chicken and even Chao Men.

The other stand that will reopen is located right next door. It will be a meat bar.

Gastronomic repositioning

“We are continuing our repositioning towards gourmet hallsexplains Pablo Franco. We are now focusing exclusively on the gastronomic side. But still with a counter and a direct relationship with the traders, unlike a food court.”

One last empty space to fill

While the Terres du Var stand has been transformed into a tasting area, there is still one area that is still closed. This is the former creperie.

“We are making good progress on this issue. But nothing has been signed yet.” The mystery should therefore quickly end as to the geographical destination to which the customer will be taken.

The owner of the Biltoki market halls intends to put even more emphasis on entertainment in the future. Concerts and events will ignite the start of the school year. A start that will also be marked, of course, by the anniversary of the market halls. The establishment will celebrate its third anniversary on September 21. The program of festivities is currently being finalized.

Café Toulonnais in tune

The establishment, located on the rooftop of Les Halles, is a little bit different. Independent from Biltoki but necessarily linked to the place. Café Toulonnais was taken over last January by Aurélien Quatana. The young man knows the concept well, he has been working there since it opened three years ago. And now that he is the boss, he intends to add his own touch.

“We have a catering section for lunch from Tuesday to Saturday. And on Thursdays, Fridays and Saturdays, a bar activity. Our menu, which we change very often, highlights fresh products. You can find a seafood trio as well as a burger or bruschetta.”

During the summer, this part was put on hold, it will resume on September 3. We mainly have an active clientele. So, during the summer period, we focused on evenings.” Musical evenings that should continue in full swing… We have quite a bit of success on Thursday, we want to do the same for Friday and Saturday.”

Café Toulonnais also offers private events for businesses and individuals.
