Raclette and mushroom croque-monsieur

This is one of the great classics of bistros. Inexpensive, generous and easy to cook, the croque-monsieur always seduces gourmets. To vary the pleasures, discover this original recipe perfect for fall. Inspired by Japanese gastronomy, this croque-monsieur combines eryngii mushrooms (flavored with soy sauce, miso and maple syrup), candied red onions and raclette cheese. Here is the recipe for the raclette croque-monsieur and miso-glazed eryngii:

For 4 people
Preparation: 20 minutes
Cooking: 1 hour

Ingredients :

  • 8 slices of country bread

  • 6 eryngiis

  • 2 large red onions

  • 45 ml soy sauce

  • 1 teaspoon white miso paste

  • 45 ml maple syrup

  • 12 slices of raclette cheese

  • 100 g butter

Clean the mushrooms, then cut them into slices.
Peel and slice the red onions.
In a bowl, mix the soy sauce, miso paste and maple syrup.
In a frying pan, melt 10 g of butter over medium heat. Add the mushrooms and cook for 1 minute on each side. Pour the sauce and cook for 10 minutes, turning the mushrooms halfway through cooking. Once golden brown, remove the mushrooms from the pan.
