Here is the recipe for François Perret’s waffles:

Ingredients :

Mix the flour, salt and sugar. Add the milk, then the melted butter. Finish with the whipped egg whites.
Mix the two mixtures gently with a spatula.
Lightly butter or oil the waffle iron plates, then cook the waffles. Sprinkle with icing sugar and enjoy: they will be “crunchy and soft”.
