Industrial flavors presented as natural, frozen products sold as fresh… The Baillardran company, one of the flagships of Bordeaux cannelé, has just been fined 100,000 euros for “deceptive commercial practices”.
A former employee of Baillardran admits to having sold, on instructions from her superiors, frozen pastries without having informed her customers: “There are three or four freezers and as soon as we run out of cannelés, we go and get them there”she remembers. Sometimes, “the heart of the cannelé is a little frozen, we were told: 'It doesn't matter, we'll sell it, it will defrost within the day'”adds the latter.
In Bordeaux (Gironde), Baillardran is the giant of high-end cannelé, with 150 employees and nearly 12 million euros in annual turnover. But behind the impeccable window, our colleagues from France 3 noticed abuses: last year, videos filmed in the kitchens, showing the presence of rats among the ingredients, were broadcast. Unions also denounce breaches of labor rights.
