Each new school year brings its share of new things. The 2024 vintage sees the return of sleeping beauties, the first solo steps of promising young chefs, as well as the new adventures of confirmed toques. Enough to happily fill your back-to-school gourmet dance card, in Paris and elsewhere.

PETRUS

Sylvain Sendra, starred chef with a passion for plants at Fleur de Pavé (2e), took over this brasserie in western Paris, a sleepy institution that he restored and relaunched in August around chic bistro classics (Lucullus artichokes, pâté croûte, millefeuille) as well as creative ones (meadow carpaccio with green curry) and a solid wine list. By the end of the month, the chef will also launch a separate counter with a gastronomic menu.
